In this recipe, we used Chicken of the woods (Laetiporus Murill) as the star of a Vietnamese Bahn mi. Bahn mi is a French-inspired sandwich made of baguette-style bread usually with pickled carrot and daikon radish, mayonnaise, and meat, tofu, or seafood.

As a wild garnish, we used dandelion (Taraxacum officinale) and garlic mustard (Alliaria petiolata). For more information about Chicken of the woods check our Chicken of the woods nuggets recipe.

Sesame Chicken of the woods Bahn mi

Equipment

  • 1 air fryer or oven
  • 1 cutting board
  • 1 Knife
  • 2 Bowls
  • 1 Sauce pan

Ingredients

  • 250 grams Chicken of the woods
  • 1 baguette

Chicken of the woods sauce

  • 2 tbsp sesame oil
  • 4 tbsp tahini
  • 2 tbsp dark soy sauce
  • 1 tsp pepper

Pickles

  • 50 grams shredded carrot
  • 50 grams shredded daikon radish
  • 1/4 cup rice vinegar
  • 1/8 cup suggar
  • 1/2 cup water
  • 1/2 tbsp salt

Garnish

  • 1 tbsp mint
  • 1 tbsp coriander
  • 1/2 part of cucumber
  • 4 leaves dandelion
  • 4 leaves garlic mustard
  • 1 tbsp Maggi
  • 4 tbsp mayonnaise
  • 2 tbsp sesame seed

Instructions

Pickles

  • Pour water and vinegar into a saucepan.
  • Dissolve salt and sugar in the vinegar mixture.
  • Bring the mixture to a boil.
  • Put finely shredded daikon radish and carrot into a bowl.
  • Pour vinegar mixture over radish and carrot and leave it for 30 minutes.

Chicken of the woods

  • Clean the chicken of the woods well and remove all hard parts and parts of wood that might still be attached to it.
  • Cut the mushroom into bite-size pieces.
  • Put the mushroom into a bowl with all the sauce ingredients.
  • Transfer the mushroom to the air fryer and fry for 20 minutes at a temperature of 180℃.

Garnish

  • Finely cut mint, coriander, cucumber, and garlic mustard leaves.

Assembling Bahn mi

  • Cut the baguette into four parts and slice each part length-wise.
  • Spread a layer of mayonnaise on each part of the baguette.
  • Put a dandelion leaf on the bottom part of the baguette followed by chopped garlic mustard leaves.
  • Put the mushroom on top of the dandelion and garlic mustard leaves.
  • Sprinkle sesame seeds.
  • Add cucumber, pickles, and green herbs.
  • Sprinkle with Maggi.
