The beef steak mushroom (Fistulina hepatica) is a rather unique-looking mushroom appearing in the fall on oak trees or oak tree remains. As its name suggests, it resembles a piece of steak, including a blood-like juice coming from it when cut. The structure of this mushroom is also rather meat-like, which inspired us to make jerky out of it.

Beef steak mushroom jerky

Equipment
- 1 Food dryer or oven
- 1 Mixing bowl
Ingredients
- 200 gram Beef steak mushroom
Marinde
- 4 tbsp Soy sauce
- 1 tbsp Maple syrup
- 1 tsp Liquid smoke
- 1 tsp Smoked paprika powder
- 1 tsp Garlic powder
- 1/2 tbsp Sesame oil
- 1 tsp MSG
- 100 ml Water
Instructions
- Mix the ingredients for the marinade in a bowl.
- Chop the mushroom in to thick slices.

- Add the mushroom slices to the bowl, cover and put in the fridge over night.

- Take the mushrooms out of the marinade and put the into a food dryer a 80°C for 12 hours. Alternatively an oven can be used on the same temperature.

The beef steak mushroom can be eaten cooked, but also raw, for example, as a topping for a poke bowl.
