This salad contains two types of seaweeds: sea lettuce (ulva spec.) and bladder wrack (Fucus vesiculosus L.), and two types of sea vegetable: sea rocket (Cakile maritima) and rock samphire (Crithmum maritimum).
It can be hard to tell apart different types of seaweeds but luckily there are no poisonous ones. When you harvest them just make sure you pick them from a clean environment. The two types of seaweeds we picked are relatively easy to recognise. While determining the exact type of sea lettuce requires a microscope or even DNA research, for consumption purposes you only have be able to determine that it is a member of the sea lettuce family. This is easy as it literally looks like lettuce out of the sea.
Bladder wrack is widely used in Japanese cuisine and is common in most parts of the world. It is also sold as a super food in the form of powder or pills because of its many health improving properties.
Sea rocket is a plant closely related to mustard that grows exclusivly near the sea. It has the spicy taste of mustard but also a bit of saltiness.
Rock samphire also exclusively grows near the sea, mostly in a rocky environment as its name suggests. Historically, it was used for pickling. Nowadays, it is sold as an expensive herb with a price of around 10 euros for 50 grams. Taste-wise, it is similar to fennel with citrus notes. You can consume its leaves and seeds.

Sea salad
Equipment
- 1 big pot (for cleaning seaweeds)
- 1 Frying pan
- 1 saucepan
- 1 bowl
- 1 Knife
- 1 Blender or food processor
Ingredients
- 20 gram Sea rocket
- 5 gram Rock samphire leaves
- 7 gram Rock samphire seeds
- 40 gram Sea lettuce
- 110 gram Bladder wrack
- oil for frying
- 2 tbsp seasame seeds
Dressing
- 1 tbsp Sesame oil
- 4 tbsp Fermented Pullball paste or miso (https://chefofnature.com/?p=1096)
- 11 tbsp Neutral oil
Instructions
Dressing
- Mix all dressing ingredients in a food processor or blender and blend into a smooth paste.

Salad
- Put bladder wrack in a big pot with water and wash it thoroughly.

- Put sea lettuce in a big pot with water and wash it thoroughly. Squeeze the water out. Cut it into smaller pieces.

- Wash and finely chop the sea rocket.

- Wash rock samphire and blanch its leaves in a saucepan for 2 minutes.

- Chop bladder wrack and heat a frying pan with some oil.

- Fry bladder wrack until it turns green. Be cearful because its bladders filled with air can pop out from the pan. You can use a lid.

- Mix all salad ingridients in a bowl.
- Add dressing to the salad and sprinkle over the seasame seeds. It pairs well with a piece of fish.
